Influence of starter culture and cell free supernatant on the growth of Staphylococcus aureus in refrigerated fish.

Abstract

Growth of Staphylococcus aureus in the presence of bacteriocin producing lactic acid bacterium (LAB) and cell free bacteriocin supernatant was studied in fish held at 4 C. A non specific inhibition of S. aureus was observed in fish dipped in LAB suspension. Cell free bacteriocin supernatant did not show any inhibitory action. Bacteriocins of LAB inhibited the S. aureus in in-vitro assays.
